By nurturing microbes, we nurture ourselves, improving gut health, boosting mental clarity and unlocking vibrant flavors from the garden. Since Kimchi has become a modern kitchen staple its true magic lies in its versatility. This session dives deep into the ‘Kimchi universe’ teaching you how to lock in its bold, umami-rich profile and use it as a foundational ingredient for a low waste, flavour-packed pantry inspired by the Omved’s kitchen recipes.

You’ll learn:

In this creative session, we move past the basic ferment to explore the art of Kimchi as a seasoning and base. You will discover with Josephine how to capture Kimchi’s unique depth through innovative preservation methods: dehydrating it for intense Kimchi salt and gomasio, umami Stocks, and blending its active brine into cultured nut spreads and probiotic butters. This is more than just a side dish, it is about learning to use the ‘living’ nature of Kimchi to transform everyday meals into nutrient and complex feasts.

What to expect:

The workshop begins with a journey through Omved’s fermentation library, where we will taste various Kimchi creations. You’ll learn the science of ‘dry’ fermentation and the wonderful joy of nurturing your ferments like a garden. You will leave with the knowledge to create with different methods of preserving kimchi flavours and textures: from stock, salts or cultured nut spreads.

What’s Included:

Your ticket includes full access to the Omved gardens, a guided class on Kimchi’s origins and medicinal benefits, and a comprehensive tasting session. You will take home a jar of your umami-rich creation made during the class. No prior experience is needed, just a curiosity for deep flavor and a love for the ‘Conscious kitchen’!

About the Host

Josephine Marchandise

Head of the OmVed Regenerative and Creative Kitchen. Jo is one founding voice behind the kitchen ethos at OmVed Gardens, a vision rooted in the journey from seed to plate to gut. Her work focuses on the intersection of wild foraging and deep fermentation, exploring how hyperlocal ingredients can sustain both people and the environment. She is a member of the UK Fermenters Guild, organises fermentation festivals and teaches across London and France. @jomarchinfood

A note on accessibility: The gardens are set on a hill, featuring steep paths and may not be suitable for those with limited mobility. Wheelchair access across the site is currently limited while landscape works are underway. For events, there is drop-off access by car to the Barn main building. If you require wheelchair drop-off, please get in touch with us ahead of time. There is an accessible toilet located inside the Barn.
